Working for oneself certainly has it’s benefits, not least having the freedom to take decisions to do what you want when you want – basically to be spontaneous. Eliza (my youngest) is a teacher so had half term a couple of weeks ago – on the Monday evening whilst having supper, and with the promise of good weather, we literally took a split second decision to head down to Cornwall – we luckily found a BnB where we could stay for a couple of nights, and at 6am on Tuesday we were on the road to St Mawes, a place which is very special to us – we had such happy family holidays there when the children were young. We had a brilliant couple of days, probs would have been whatever, but there’s something even more special when it’s spontaneous.  

Ever since then we seem to have had a run of sunshine, admittedly with the odd monumental downpour – my poor mum got badly flooded in Shropshire on Monday night as a result of flash flooding although thankfully all is well, but we certainly can’t ignore the changes that are happening around us. Perhaps it’s all the more reason to take opportunities when one is presented with them and not put them off.

I don’t know about you but when the sun’s shining we are much more inclined to make a last minute plan to see friends, and then need to produce something very simple at the last minute. I also believe you can't beat good old TOMATO MOZZARELLA AND BASIL SALAD (in this case I have used Basil Oil). Of course the common denominator in all of these is Extra Virgin Olive Oil - who can live without it?
